Our coffee is decaffeinated at the Mountain Water facility in Veracruz, Mexico, also known as the Mexican Water Process. This patented, chemical-free method uses pure water from Pico de Orizaba, Mexico’s highest mountain, to gently remove caffeine while preserving the beans’ natural flavor.
Green beans are immersed in mountain water, which extracts caffeine but retains soluble flavour compounds. The water then passes through a filtration system that removes caffeine, leaving behind a solution rich in the coffee’s original flavors. The beans are dried to the proper moisture level, resulting in coffee that is 99.9% caffeine-free.
It comes from Bourbon, Caturra, Typica, and Catuaí varietals grown at around 1,000 meters. The relatively low altitude produces larger beans and a smooth cup with gentle acidity.
This decaf is cultivated by smallholder farmers who deliver their harvests to the San Cristóbal de las Casas and Yajalón buying stations in northern Chiapas, located east and northeast of Tuxtla Gutiérrez.
